For the longest time the only thing that every went into my crock pot was soup or some sort of roast with vegetables along side. Now those things are fabulous but every family needs a little variety. And mama doesn’t always have time to cook between the time the kiddos get out of school and hubby gets home from work. Over time I have found that my mornings are definitely my best time to be in the kitchen and that the crock pot is the solution to those quick and expensive trips for drive through or take out.
Here is another one of my family favorite recipes made in the crock pot. The smell that comes from your kitchen all day while this is cooking is just wonderful and it’s something my whole family loves down to the littlest one (although she does give her mushrooms away!) Crock Pot once again saves the day when it comes to that time crunched hour or 2 before meal time.
Easy Crockpot Chicken Cacciatore
- 4-6 chicken breasts (depending on the amount of servings you need)
- Salt and pepper
- 1 Cup mushrooms (fresh or canned/any variety)
- 1 large onion, diced
- 1 bell pepper (I used 1/2 of a red one and 1/2 of a yellow one)
- 1 T garlic salt (or any sort of garlic you prefer)
- 3/4 Cup red wine vinegar
- 28 oz can crushed tomatoes
- 1T dried basil
- Pepper to taste
And this is the best part! Toss all of the ingredients minus the chicken in the crock pot & stir together. Add chicken and make sure it’s covered. Cook on high for 4 hours or low for 7-10!
This goes well served with anything. I love it with pasta, rice, or potatoes!
