Crock Pot Chicken Pot Pie

You know, I just adore my crock pot.  I love the ease of putting something in when I have my spare moments in the morning and not having to worry about what to serve my family when the rush hits after school.

This recipe is an absolute go-to comfort food that everyone in my family is excited about when I tell them what’s for supper.  I hope your family enjoys it as much as mine does.

Crock Pot Chicken Pot Pie

Serves: 6-8

Ingredients

  • 3 cups chicken broth
  • 2 small (or 1 large) cans of cream of chicken soup
  • 3 boneless, skinless chicken breasts cut up
  • 2 c fresh or frozen cut veggies (I use a veggies blend-corn/green beans/carrots)
  • 2 t salt
  • 1 t pepper
  • 2 cups milk
  • 4 T cornstarch
  • 4 T warm water
  • biscuits

Instructions

Put the chicken, broth, soup, veggies, salt, and pepper in the crock pot and let cook on low for 6+ hours.  I bake some biscuits during the day timing them to be done around the time we will be eating but you can use canned or purchased biscuits as well.  Just make sure to get them baked or nice and warm before time to serve.  About 1/2 hour before serving I take a bowl with the water and corn starch and smash of the corn starch really good so it isn’t lumpy, then add the milk to the bowl and whisk until there are no corn starch lumps and add it to the crock pot, stir it all in.  About 15 minutes later stir again and then stir before serving and it should have thickened up to a nice gravy consistency.  If you find it isn’t as thick as you like it you can repeat this with a bit more cornstarch mashed in a bit more water.  Serve over your nice warm biscuits and you have supper!

      Absolutely! It’s really a simple recipe that doesn’t take much time.
      2 C. flour, 1 t. baking powder, 1 t. baking soda, 1 T. sugar, 1/2 t. salt, 1/4 C. cold shortening, and 3/4 cup buttermilk.
      Combine dry ingredients, cut in shortening, and mix in buttermilk.
      Knead a bit on a floured surface, roll to an inch thickness and cut with round cutter.
      Put on greased cookie sheet and bake at 450 for 10-12 minutes or until lightly browned.
      Should make about 18 biscuits so if you don’t have a big family like mine you might want to half it, lol.

    OK the biscuit thing has thrown me – I have a feeling there is a cultural difference going on here! Are we talking sweet biscuits, like a cookie?? or is it savoury?!

    Otherwise, I’m all over this is sounds absolutely gorgeous and really warming!

    I think my favourite comfort food is any carb (quinoa, couscous, noodles,etc) cooked in chicken stock and served up with peas and sweetcorn :) I’d never serve that for anyone else though, way too embarrassing!
